Within the scope of the “Ancient Breads Come Back to Life” project, Yozgat Bozok University unearthed historical breads inspired by 3,500-year-old Hittite cuneiform tablets. Davut Hatip, a student at the Department of Archaeology, researched and practically prepared ancient bread recipes under the supervision of Advisor Assoc. Prof. Dr. Serkan Erdogan.
Project Details
- Various types of bread were produced from the Hittite, Sumerian and Roman periods.
- The breads contain cheese, honey, figs, peas, raisins, dried apples, whole wheat flour, sourdough and hazelnuts.
- Flours were obtained by grinding in a stone mill.
- A total of 8 types of ancient bread were produced.

David Hatip:“We created these ancient bread recipes based on Hittite cuneiform tablets. As a result of our research, we learned that the breads were nutritious and filling. We are happy that these breads, which were preferred by Roman soldiers on long journeys, have survived to the present day.”
