Nestled in the province of Guadalajara, Brihuega is a charming medieval town located just an hour’s drive from Madrid. Surrounded by farmland, villages, and nature preserves, the town transforms each summer when approximately 2,500 acres of lavender fields come into bloom, reminiscent of the iconic landscapes of Provence, France.

Over the past decade, the lavender harvest has become a significant draw for Brihuega, attracting visitors from near and far who are captivated by the natural beauty of the blooming fields. This annual spectacle has breathed new life into the town, welcoming tourists and their contributions to the local economy.

Tales of Brihuega
My own discovery of Brihuega began during my time studying in Alcalá de Henares, a university town nearby. It was in a cozy wine bar, Vinoteca Esencias del Gourmet, that I first heard about Brihuega from the owner, Javier Hernandez.
Hailing from a family of churro-makers, Javier shared stories of his hometown’s rich history and the transformative impact of the lavender harvest on Brihuega’s economy and community. Like many young villagers, Javier had ventured out into the world but always held a deep connection to his roots in Brihuega.
